PART FOUR: Cholesterol in Foods

Hummm good, if you are a dog!!

Do not eat any of this stuff, just break it into pieces and put into a 50 mL beaker.

Add 25 mL of petroleum ether to the beaker and the sample.

Use a pestle to press the sample while in the ether so the sample absorbs some of the ether.

Set the sample on the hot plate in the hood and allow the ether to complete evaporate.

Once the ether has evaporated remove the beaker from the hot plate and allow the sample to cool.

Once the sample has cooled add 2 mLs of chloroform to the beaker. Besure the chloroform is mixed well in the sample.

Transfer 15 drops of the solution to a 13 x 100 mm test tube using a plastic pipet.

Add 35 drops of chloroform to the test tube.

And 24 drops of acetic anhydride. Do not get any of the acetic anhydride on your skin or clothes.

Gently and carefully flick the test tube to mix the solution.

Set the test tube in a test tube rack in the hood and carefully add 5 drops of concentrated sulfuric acid. Be very careful not to get any of the concentrated sulfuric acid on your skin or clothes. Immediate wash with water is any is spilled. Be careful when picking up the dropper bottle that there is no liquid on the outside of the container. Use plastic gloves as minor protection.

Look for the formation of a green color as a positive test for cholestrol.

Obtain samples of mayonnaise, olive oil, and butter and repeat the test. Record your observations on the Results page.
