PART THREE: Saturated Versus Unsaturated Fatty Acids

Label three clean 13 x 100 mm test tubes with numbers 1, 2 and 3.

Into the test tube label 1 add steric acid to cover the curved bottom.

Add the same amount of oleic acid to test tube #2. Do not add anything to test tube 3 at this point. Add 5 mLs of chloroform (a clear, colorless liquid, to each test tube 1, 2 and 3. Before continuing be sure the samples in test tubes 1 and 2 have completely dissolved. Do not get any of the chloroform on your hands or clothes.

Now add about 50 drops of the iodine solution to test tubes 1, 2 and 3 and mix the solutions.

Use a white sheet of paper as a background compare the color intensity in test tube 1 and 2 with the control (test tube 3). Record your observations on the Results page.
